Toffee Sweets Recipe

Ingredients

Serves: 20

200g caster sugar

125g butter

60ml water

1/8 teaspoon salt

1 teaspoon vanilla extract

250g plain chocolate, chopped

 

Preparation method

Prep: 10 mins | Cook: 20 mins | Extra time: 30 mins

1. Grease a swiss roll tin.

2. Combine sugar, butter, water and salt in a heavy saucepan. Cook, stirring continuously until the mixture reaches light crack stage (160 degrees C) on a sugar thermometer. Remove the pan from heat and stir in vanilla. Pour mixture into the prepared tin.

3. Sprinkle chocolate on top of the hot mixture and spread the melting chocolate over the top of the mixture. Chill well. Crack into pieces to serve.

Great Walnut Toffee Recipe

This is one of my favourite toffee recipes so i thought id share it :)

Ingredients

Serves: 20

225g butter

200g caster sugar

1 tablespoon golden syrup

3 tablespoons water

150g chopped walnuts, divided

150g plain chocolate, chopped

Preparation method

Prep: 10 mins | Cook: 20 mins | Extra time: 15 mins

1. Butter a 23cm square baking dish, and set aside.

2. Melt 225g butter in a large saucepan over medium heat. Stir in the sugar and syrup until smooth. Heat to 145 degrees C using a sugar thermometer.

3. When the temperature has been reached, stir in 2/3 of the walnuts, and cook for 3 more minutes, stirring constantly. Pour into the prepared dish, and allow to cool. When the toffee is cooled, remove from the dish, and place onto greaseproof paper.

4. Melt chocolate chips in a metal bowl over a pan of simmering water, or in a glass bowl in the microwave, stirring frequently until smooth.

5. Spread 1/2 of the melted chocolate onto one side of the toffee slab, and sprinkle with half of the remaining nuts. Allow to cool until set, then repeat with the other side. Break into bite size pieces when set.

Pretzel Toffee Chocolate Sweets

These are fast and easy to make so there perfect for anyone to have a go at.

Ingredients

Serves: 20

20 plain salted pretzels

20 chocolate covered toffee sweets, like Rolo

20 pecan halves

 

Instructions

Prep: 10 mins | Cook: 4 mins

1. Preheat oven to 150 C / Gas 2.

2. Arrange the pretzels in a single layer on a parchment lined baking tray. Place one chocolate covered toffee sweet on each pretzel.

3. Bake for 4 minutes. While the Rolo is warm, press a pecan half onto each pretzel. Cool completely before storing in an airtight container.

Peppermint Cream Sweets

One of my favorite sweet recipes. Enjoy!

Ingredients

Makes: 35 depending on size

1 Egg White

340g (12oz) Icing Sugar

A few drops Peppermint Essence

A few drops Food colouring (optional)

Preparation method

Prep: 20 mins | Extra time: 1 day, chilling

1. Line a baking sheet with greaseproof paper. Whisk the egg white lightly in a bowl until frothy but not stiff.

2. Sift the icing sugar into the bowl and stir it into the egg white with a wooden spoon until the mixture is stiff.

3. Knead in the peppermint essence. And the food colouring if required.

4. Roll the mixture into balls and put on a baking sheet. Use a fork to flatten them. If the fork sticks to them then dip the fork in icing sugar before pressing down.

5. Refrigerate for 24 hours

 

Old Fashioned Toffee Sweets

Toffee is one of my Favorite sweets and i wanted to try and make some. I got this recipe from a friend and it was really easy to make and they tasted scrummy! Give it a go.

Ingredients

Serves: 60

400g caster sugar

200g dark brown soft sugar

350g golden syrup

250ml evaporated milk

475ml whipping cream

250g butter

1 1/4 teaspoons vanilla extract

 

Preparation method

Prep: 10 mins | Cook: 20 mins | Extra time: 30 mins

1. Grease a 30x40cm tin.

2. In a medium-sized pot, combine sugar, brown sugar, golden syrup, evaporated milk, whipping cream and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 120 C, remove the pot from the heat.

3. Stir in vanilla. Transfer mixture to the prepared tin and let the mixture cool completely. When cooled, cut the toffee into small squares and wrap them individually in greaseproof paper for storage.
